Cool Cucumber Salsa

COOL CUCUMBER SALSA

1 cup peeled, diced cucumber *

1 cup seeded, diced tomato

½ cup diced red, yellow or green pepper

½ cup diced onion

1 clove garlic, minced

1 Tablespoon minced fresh dill

1 Tablespoon minced fresh cilantro

1 Tablespoon lime (or lemon) juice

Mix all ingredients together and ENJOY!

This salsa is great with chips, served over scrambled eggs, with grilled salmon…….by the spoonful right out of the dish!

*If cucumber has large seeds, remove seeds. Also, cucumber does not have to be peeled.
